Corona Queso Dip {recipe}

Summer is almost here!! The days are getting longer, it is getting hotter outside and my back porch is slowly becoming my at home getaway again. There is absolutely nothing better than sitting out on the back porch, watching my sweet Sophie pup run around the back yard and drink a yummy beverage!! In the mornings I like to sit out there in my fuzzy pj pants and drink my coffee and in the late afternoons I like to sit out there with a cold beverage in my hand.

I think I have mentioned on here before that my back porch is one of the reasons I built my house where it is. The lot I picked backs up to woods that are privately owned and will never be built on. I also live on a small hill and my back porch just so happens to look over a piece of the woods that has a small pond. There are always deer or rabbits in my yard and I love it!! Sophie loves it too!! Actually she just loves to chase the bunnies but it’s a good thing they are faster than her and she’s afraid to go in the woods. HA!

I recently switched to night shift at work so I wake up in the afternoons now and that has changed my back porch sitting time into more of a breakfast/brunch time. I have been obsessed with dips lately and especially my signature Corona Queso Dip!! I made the mistake of going to the grocery store after work (at 7am!!) one morning and came home with a bunch of random ingredients, including a box of Corona Extra. What can I say? The limes inspired me! And dip. Always the dip…

…and then it hit me that I have never shared my Corona Queso Dip with you!! How rude of me!! Never fear, I shall share it with you now. Shall I remind you that it is best served with a cold Corona in hand (with a lime, duh) and your favorite chips (I am obsessed with those blue corn chips, they seem saltier??)!

This is a pretty simple dip, all you need is a few ingredients and one pan! Yes, it is a one pan dish and you just can’t beat that.  It also has sausage so I think you could really just eat the dip and call it a meal. That’s what I’m going with anyway. HA!!

So all you do is brown a little sausage, drain it, put it back in a pan with some cubed up cream cheese, shredded sharp cheddar cheese, rotel, corn and Corona Extra! You mix all that up until it’s all melty and delicious and add in a diced Roma tomato and some green onions. I swear the smell of green onions makes me swoon. Why are they sooooo good y’all??

Side note- I don’t buy pre-shredded cheese anymore. I like to buy a block and shred it myself in my food processor. I think it melts better and tastes better. Just me??

After your dip is done just throw it in a bowl, gather up your favorite chips and take it outside to savor on your back porch. If that isn’t heaven I don’t know what is!!

Corona Queso Dip
Ingredients
Instructions
  1. Brown sausage in a skillet, drain and put it back in the same pan.
  2. Cube cream cheese and add it to the cooked sausage, heat over medium until cream cheese is melted.
  3. Add shredded cheddar cheese to cream cheese and sausage and mix it until it is melted as well.
  4. Add Rotel, corn and Corona Extra to pan and mix until creamy.
  5. When everything is melted together, take off the burner and pour into a bowl.
  6. Top with chopped up Roma tomato and green onions and serve with you favorite chips!!
  7. Enjoy!
